Preheat air fryer to 375F. In a medium bowl, combine the flour, greek yogurt, baking soda, baking powder, vanilla, and cinnamon. Mix until a sticky dough forms. Then, add in the diced apples and mix until evenly distributed throughout the dough (the dough will and is supposed to be sticky). In a separate small bowl, mix together the sugar and cinnamon for the cinnamon sugar coating. Then make the salted caramel glaze. In a separate medium bowl, mix together the almond butter, melted coconut oil, maple syrup, and salt. Then, whisk in the powdered sugar and milk until smooth. Set aside. Once the air fryer is preheated, place a piece of parchment paper on bottom. Using a large spoon, scoop the dough out (about 1-2 tbsp per ball), and roll the ball of dough in the cinnamon sugar mixture to completely coat (you can use a spoon to help roll it around if the dough is sticking to your hands too much). Once coated, place into the air fryer basket. Repeat until the dough is gone. Air fry for 6-8 minutes, flipping halfway through. Once done, remove from the air fryer and drizzle with the salted caramel glaze. Enjoy!
