In a bowl, add the warm water, sugar, and yeast. Let the yeast sit until it proofs and is puffy. Set aside. In a large bowl, sift together the flour, baking powder, baking soda, salt and sugar. Cut in the butter until the mixture is crumbly. Stir in the buttermilk and yeast mixture until a dough forms. Flour your hands and knead the dough a couple of times until the dough is smooth and elastic. Divide the dough into 20-25 pieces and roll into small balls. Preheat air fryer to 325F and place a piece of parchment paper in the basket of the air fryer. Brush the dough balls with melted butter. Place in the air fryer and air fry at 325F for 4-6 minutes. Remove from the air fryer and immediately brush the tops or dip into the melted butter. Then, roll in the cinnamon sugar mixture to completely coat. Repeat until all the balls have been cooked and coated. Serve warm with granola butter.
