Preheat air fryer to 350F. In a large bowl, mix together the flour, baking powder, baking soda, salt, and greek yogurt tunic a dough forms, and set aside. In a skillet on medium-high heat, cook the eggs in 1 tbsp of butter, and season with salt and pepper. Mix together until the eggs are cooked and scrambled, making sure not to overcook your eggs. In a separate skillet, cook your sausage or bacon according to package instructions and crumble. Lay the dough out on a floured surface and cut the dough into 8 equal-sized pieces. Flatten each piece and place ~1 tbsp of the shredded cheddar cheese in the middle of each, followed by 1-2 tbsp of the egg filling, and then the sausage or bacon crumbles. Fold the sides over the filling, pinch them together, and use your hands to shape into a ball. Spray the basket of the air fryer with cooking spray. Working in batches, place the balls into the air fryer. Brush the tops with the egg wash, and then sprinkle seasoning of choice on top/ Air fry at 350F for 8-10 minutes, or until golden brown.
