Place a pizza stone in the oven and preheat to 500F for at least 30 minutes. Mix together all of the ingredients for the dough in a large bowl until a dough forms. Lay the dough on a floured surface and knead with your hands a couple of times. Add 1-2 tbsp more flour if the dough is too sticky. Once smooth, roll the dough out into a large circle on a piece of parchment paper lightly dusted with flour. Fold the edges over to create a crust. Top the dough with pizza sauce, shredded mozzarella, and pepperoni. Lightly brush the crust with olive oil. Place on the heated pizza stone in the oven and bake at 500F for 15-18 minutes or until the cheese has melted and starts to brown a little. Remove and allow to cool for 1-2 minutes before transferring to a cutting board. Slice and enjoy!
