Preheat the oven to 350F. Grease an 8x8” baking pan with butter, then line with parchment paper. Cookie base: Add the butter to a saucepan over medium-high heat. Allow to melt & slightly brown (~5 mins), stirring frequently. Remove & pour into a large bowl. Cool slightly. In a medium bowl whisk together the flour, baking soda, baking powder, and salt. Set aside. Add both sugars to the brown butter & whisk. Add the egg & whisk well until combined. Add in the heavy cream and vanilla. Whisk to combine. Add the dry ingredients to the wet; gently fold. Fold in chocolate chips. Scoop the dough into the baking pan and spread. Bake at 350F for 22-27 mins, until lightly golden. Remove & cool while you prepare the pistachio filling & ganache. Pistachio filling: In a large pan over medium heat, melt the butter. Add the kataifi & toast until golden & crispy, stirring frequently. Transfer to a bowl & cool. Then add the pistachio cream; mix until combined. Ganache: Place the chocolate chips into a large bowl. Heat the heavy cream in a saucepan until it just begins to boil, then pour it over the chocolate chips. Let sit for 5 mins, then stir until smooth. Assemble: Press the pistachio filling over the cookie layer, spreading evenly. Then, pour the chocolate ganache on top & spread. Garnish with chopped pistachios. Place in the fridge to set for at least 1 hr before slicing & serving. Enjoy!
