Preheat air fryer to 350F. *You can alternatively make these in the oven! Preheat oven to 375F and line a baking sheet with parchment paper; set aside. In a large bowl, add all of the ingredients, except the melted butter and melted chocolate. Mix until well combined. The dough is going to be a little sticky, but just trust the process! Lay the dough on a generously floured surface. Sprinkle some more flour on top of the dough. Use your hands to knead a couple of times, until the dough becomes smooth. If the dough still seems too sticky, add 1 more tbsp of flour at a time, and continue to knead until it comes together more! Divide the dough into 16 pieces. Use your hands and fingers to pinch and form the pieces into balls. Place a piece of parchment paper in the basket of your air fryer. Working in batches, transfer the balls to the air fryer (I did 8 at a time). If using the oven, transfer the balls to the prepared baking sheet. Brush the tops with melted butter. For air fryer, air fry at 350F for 4 minutes, gently flip and air fry for another 3-4 minutes, or until golden brown. For the oven, bake at 375F for 15-18 minutes, or until golden brown. While the donut holes are baking, mix the cinnamon sugar coating ingredients together in a small bowl. Remove from donuts from the air fryer or oven, brush the tops with melted butter, and immediately toss in the cinnamon sugar mixture. Serve warm with melted chocolate of choice. Enjoy!
