Preheat oven to 350F. Butter a small baking dish or cast iron skillet. Start by making the topping. Whisk together the cocoa powder, sugar, and brown sugar, and cacao nut granola in a small bowl. Then make the hot chocolate batter. Start by whisking together the flour, baking powder, salt, instant espresso (if using), and cocoa powder in a small bowl. Then, add in the milk, sugar, melted butter and vanilla extract, and mix with a wooden spoon or spatula until well combined. Spread the batter into the bottom of the prepared baking dish. Then, sprinkle the topping mixture over the batter in the baking dish. Microwave the water for 2 minutes. Then, pour the hot water directly on top and DO! NOT! STIR! Bake for 35-40 minutes, until the center is somewhat set and the edges are slightly crispy. Allow to cool for 15 minutes, then serve with a dusting powdered sugar or vanilla ice cream if desired.
