Melt the butter over medium-high heat in a skillet. When butter starts to sizzle, add the pecans. Stir continuously until toasted and has that ābuttered pecanā aroma. Remove from heat and let them cool to room temp. In a large bowl, mix the remaining ingredients and add the cooled pecans. Stir to combine. Heat your griddle/pan and grease with 1/2 tsp of coconut oil. Pour batter on griddle/pan using 1/4 cup of batter per pancake. When bubbles appear on top of the pancake, flip and cook for another 3-5 minutes or until the underneath is golden brown. Top with chocolate granola and maple syrup, or any other desired toppings. Enjoy!
