Preheat the oven to 350F. Line a small baking dish or skillet with parchment paper; set aside. Place the apples in a medium bowl. Add the flour, brown sugar, cinnamon, vanilla extract, and salt. Toss to cover the apples. In a separate small bowl, mix together the almond butter, melted coconut oil, maple syrup, and salted caramel collagen peptides to make the homemade vegan salted caramel. Place the thawed puff pastry into the prepared dish or skillet. Pile the apples into the puff pastry. Drizzle half of the salted caramel sauce along with the heavy cream over the apples. Fold the edges of the puff pastry in, and then brush with the beaten egg. Bake at 350F for 40-45 minutes, or until the apples are cooked and the pastry is golden brown. Remove from the oven, and top with powdered sugar or ice cream if desired, along with a drizzle of the rest of the caramel sauce. Enjoy!
