Line an 8x8” pan with parchment paper; set aside. In a medium bowl, beat together the softened cream cheese, greek yogurt, protein powder, original collagen peptides, maple syrup, mint extract, crushed oreo cookies, and ~3 drops of green food coloring (if using). Spread the cheesecake filling in the prepared pan. Place in the freezer for at least 1 hour to allow the cheesecake to completely harden. Once hardened, slice and cut into bite-sized cubes (16-25 cubes depending on the size). Place the cheesecake bites on a baking sheet lined with parchment paper. Melt the dark chocolate and coconut oil in the microwave at 20-second intervals. Use a spoon to spoon and cover the tops of each cheesecake bite with the melted dark chocolate. Top each bite with a sprinkle of extra crushed oreos if desired. Place back into the freezer for at least 15 minutes to allow the chocolate to harden. Enjoy!
