Is there truly any better way to start the week than with a plate of pancakes? I don’t think so 🤤 Weekdays are always better when they include pancakes in my opinion 😌 These Healthy Protein Pancakes are the perfect break from all things pumpkin! In a blender, add ingredients in order as listed for the pancakes. Blend until completely smooth and there are no chunks. Let batter rest for 5 minutes to allow it to thicken. Using a 1/4 cup scoop, pour onto a heated pan. Cook over medium heat, about 3-4 minutes each side. Mix together the Greek yogurt and honey in a small bowl. Plate the pancakes, and top with the honey Greek yogurt, sliced strawberries, and drizzled nut butter. Enjoy!
