Start by cooking the bacon. Heat a skillet oven medium heat, and cook the bacon slices for ~2-3 minutes on each side, until browned. Transfer to a plate lined with paper towels; set aside. Then, make the omelet. In a medium bowl, whisk together the eggs. Then add in the milk, and whisk again until well combined. Heat a large pan over low heat and grease with butter. Add the egg and milk mixture. Season with salt and pepper to taste. Cook for a few minutes, and then flip to cook for another few minutes. Gently fold the omelet in hand, and then divide into thirds. Transfer to a plate; set aside. Then, make your pancakes. In a large bowl, whisk together the milk, butter, egg, and maple syrup. Then add in the flour, baking powder, and salt. Whisk until the mixture is smooth, the batter will be thick. Grease a skillet with butter over medium heat, and pour ~3-4 tbsp of batter onto the pan for each pancake. Drizzle ~1 tsp of maple syrup on top of the pancakes in the pan, if desired, and swirl around. Cook for ~2 minutes, then flip and cook for another minute. Repeat until you have 6-8 pancakes. To assemble, place one hot pancake on a plate and place cheese on it. Then place the omelette on the cheese, followed by slices of the crispy bacon. Top with a second pancake. Enjoy!
