AIR FRYER PEPPERONI PIZZA ROLLS

Preheat air fryer to 400F. Line a baking sheet with parchment paper; set aside. In a large bowl, mix together the self-rising flour, greek yogurt, and Italian seasoning until a dough forms (if the dough is too sticky, add 2 tbsp more flour). Lay the dough on a floured surface. Roll out the dough into a rectangle. Cut into 8 smaller rectangles, and place each on a lined baking sheet. Top each rectangle with 1-2 tsp of the pizza sauce, 2 slices of pepperoni, and 1-2 tsp of shredded cheese. Be careful not to fill too much, or you won’t be able to fold them easily! To seal, fold the corners or edges to the middle, and use your fingers to pinch the dough together, completely sealing and covering the filling. You want to make sure they’re sealed well so the cheese doesn’t ooze out while in the air fryer. Use your hands to shape into a long cylinder or small pocket. Spray the basket of the air fryer with olive oil cooking spray. Place the pizza rolls in the basket of the air fryer (you may need to cook in batches). Then, brush the tops with the egg wash and sprinkle with shaved parmesan cheese. Air fry for 8-10 minutes (start with 8), or until dark golden brown. Serve with ranch or extra pizza sauce for dipping. Enjoy!
