In a medium pan or pot, add the water and butter, and mix until the butter is fully melted. Then, add in the in the vanilla extract, sugar, and salt, and mix to combine. Bring to a slight boil. Remove from the heat and add in the flour, and mix immediately until smooth and the dough comes away from the side of the pot/pan. Place the dough in a separate bowl and allow to cool for 15 minutes. Once cooled, add in the egg and mix until smooth. Preheat your waffle iron. Place the dough in a cake decorating bag or ziplock bag and cut the corner/end off. In each section of your waffle iron, pipe ~2 tsp of batter. Then, place 1 banana slice in the middle of each and press down. Place 1 tsp of the granola butter on top of the banana slice. If you are using popsicle sticks, place in the middle of each pop, making sure the popsicle stick is hanging on the edge of the waffle iron. Then cover the ‘fillings’ with ~2 tsp more of the churro batter. Cook the churro waffle bites until golden brown. Once done, immediately roll in the granulated sugar to coat both sides. Repeat with the remaining batter, banana slices, and granola butter. Serve with melted chocolate, maple syrup and/or any other desired toppings. Enjoy!
