Preheat oven to 425F. Spoon 1 tsp of melted butter into each cup of a 12-cup muffin or popover pan. Then, place the pan in the oven to heat. In a medium bowl, stir together the flour and salt. In a large bowl, whisk together the milk, maple syrup, eggs, and 2 tbsp of the melted butter. Gradually whisk the flour mixture into the egg mixture until smooth. You can transfer to a blender to make it completely smooth, if needed. Carefully remove the hot pan from the oven. Then, pour the batter into the muffin or popover wells, filling each about â…” full. Place a couple pieces of the banana into each muffin well, and then place ~1 tsp of the granola butter in the middle of each. Bake at 425F for 18-20 minutes until they are puffed and golden brown. Lightly Brush tops with additional maple syrup. Remove from the pan, and serve immediately. Top with powdered sugar if desired. Enjoy!
