Start by prepping the filling. Line a baking sheet with parchment or wax paper. Scoop out ~1 tbsp sized portions of the chocolate hazelnut spread and place on the baking sheet. Place into the freezer for at least 1 hour, or until ready to make the cookies. Then, make the cookies. Preheat the oven to 350F and line two baking sheets with parchment paper; set aside. In a large bowl, cream the butter and sugars together until light and creamy. Beat in the egg and vanilla until combined. Then, add in the flour, baking soda, cocoa powder, and salt, and mix until just combined. Add in the chocolate chips and fold until they are evenly dispersed. Use a cookie scoop to scoop out some dough. Then, put one portion of your frozen chocolate hazelnut spread in the middle of the dough, and use your thumb to push down slightly. Enclose the dough around the filling, by adding a little more dough or using your fingers to pull the edges of the dough over the filling. Place on the prepared baking sheets. Repeat with the remaining cookie dough and frozen filling portions. Bake at 350F for 10-11 minutes. Let cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack. Dust with powdered sugar before serving, if desired. Enjoy!
