Preheat the waffle iron to desired temperature. In a large bowl, whisk together the flour, baking powder, and salt. Then, add in the milk, greek yogurt, eggs, and vanilla extract. Continue to whisk until well combined and smooth. Transfer the batter to a large ziplock bag, or you can use a spoon to pour the batter onto the waffle iron (whichever is easiest for you). Squeeze or pour the waffle batter in a long log shape into the center of each waffle section in the waffle iron. Place a slice of cooked bacon in the center of each, and lightly press the bacon into the batter. Then spread ~1 tsp of the granola butter on top of the bacon. Squeeze or spoon more batter over the bacon/granola butter to completely cover. Cook until golden brown. Repeat with the remaining batter, bacon, and granola butter. Serve warm with a dusting of powdered sugar and maple syrup if desired. Enjoy!
