Preheat air fryer to 400F. In a large bowl, beat the eggs and granulated sugar together until light yellow and foamy. Add in the milk and vanilla extract, and whisk until combined. Sift the flour, baking powder, and salt into a medium bowl. Gradually add the dry mixture to the wet and mix until just combined and there are no lumps (be careful not to overmix). Add the batter to a large piping bag or ziplock bag, cut the end off of the bag to create a 1” hole. Line the basket of the air fryer with a piece of parchment paper that is punched with holes. Pipe rounds of the batter into the air fryer (number will vary depending on the size of your air fryer). Spray the tops of the batter with cooking spray. Bake for 8-9 minutes at 400F, or until golden brown. While the bites are in the air fryer, prepare the strawberry dipping sauce. In a medium bowl, mash the quartered strawberries with a fork until the juices are released. Add in the powdered sugar and milk, and whisk until it is somewhat smooth and has a sauce consistency. Remove the bites from the air fryer, and continue cooking in batches with the rest of the batter. Dust with powdered sugar and and serve with the strawberry dipping sauce if desired. Enjoy!
