Preheat air fryer to 400F. In a medium bowl, add the cubed chicken, ginger, garlic, soy sauce, and rice vinegar and mix to coat. In a separate small bowl, beat the eggs. Then, add the crushed cornflakes to a separate medium bowl. Set up a dredging station with the beaten eggs, crushed cornflakes, and marinated chicken. Start off by dipping the chicken cubes into the egg mixture, and then into the crushed cornflakes. Toss to ensure all sides of the chicken bites are coated well. Continue with the rest of the chicken and coating. Spray the basket of the air fryer with olive oil spray, and place the coated chicken bites in a single layer in the basket of the air fryer. Lightly spray the tops with olive oil cooking spray. Air fry at 400F for 13-15 minutes, or until golden and crispy. While the chicken is in the air fryer, make the general tso’s sauce. In a small bowl, whisk together the bone broth, soy sauce, ketchup , vinegar, honey, cornstarch, ginger, garlic, and chili flakes. Heat a skillet over medium heat, and add the sauce mixture. Bring to a slight boil while stirring, then reduce the heat and allow to simmer. Cook until the sauce thickens. Once the chicken bites are done in the air fryer, place them into a large bowl and toss with the sauce to coat. Garnish with sesame seeds and/or sliced green onions. Enjoy!
