Preheat oven to 425F. Grease a small baking dish with non-stick cooking spray or butter, and set aside. In a medium bowl, add the sliced peaches, sugar brown sugar, cinnamon, lemon juice, vanilla, and cornstarch. Stir well to combine. Pour the fulling into the prepared baking dish, and bake at 425F for 10 minutes. While the filling is in the oven, prepare the sourdough topping. In a medium bowl, whisk together the flour, sugar, brown sugar, baking powder, and salt. Add the sourdough discard and stir to combine. Then, add in the melted butter and continue to stir until well combined. Remove the filling from the oven, and scoop portions of the sourdough topping on the surface of the peaches. Use a spatula or the back of a spoon to slightly smooth the topping on the surface, while keeping a few pockets of the filling showing. Sprinkle the cinnamon sugar mixture over the surface of the sourdough topping. Bake at 425F for 25-30 minutes, or until golden and bubbly. Remove from the oven and let cool for at least 5 minutes before serving. Serve with greek yogurt or ice cream if desired. Enjoy!
