Preheat air fryer to 400F. Start by making the dough. Add the warm water and honey to a bowl, sprinkle the yeast on top and whisk together. Set aside for ~5 minutes. In a separate large bowl, whisk together the flour and salt. Once the yeast is activated, pour the yeast mixture into the flour mixture. Use a wooden spoon to stir until a dough forms. If the dough seems too sticky, add 2 tbsp more flour at a time and mix. Lay the dough out on a floured surfaces and use your hands to knead a couple of times until smooth. Roll out the dough to 3/4ā thickness. Use a small round cookie cutter, mason jar, or cup, to cut out and create mini circles (should make 10-12 minutes mini donuts). Then, using a smaller round lid or cutter, pop the inner circle hole out to create the donut shape. Place the donuts on a baking sheet lined with parchment paper, cover with a kitchen towel, and allow to rest for 10-15 minutes. While the donuts are resting, whisk together all of the ingredients for the strawberries and cream glaze in a small bowl, until smooth. Lightly spray the basket of the air fryer with nonstick cooking spray. Working in batches, place the mini donuts in the air fryer (I did 4-5 at a time). Then, brush the tops of the donuts with the melted butter. Air fry at 400F for 5-6 minutes, or until golden brown. Once they are done, allow to slightly cool and then dip into the glaze. Dust with powdered sugar if desired, and serve warm. Enjoy!
