Preheat oven to 425F. Place the sweet potatoes in a large bowl. Toss them with olive oil, paprika, oregano and a large pinch of salt and pepper. Spread the fries out on a large baking sheet in an even layer. Bake for 15-20 minutes, flip, and then bake for another 15-20 minutes (they should be tender yet crisp). While the fries are baking, melt the butter and garlic together in the microwave or in a small pan over medium heat. Remove the fries from the oven and gently toss with the garlic butter and parmesan. Then, make the aioli by mixing together all of the ingredients in a small bowl until well combined and smooth. Serve the fries with the aioli. Enjoy!
