Preheat oven to 350F. Grease or line a 8x8” baking pan; set aside. In a small microwave-safe bowl, melt together the chocolate chips and butter in the microwave at 20-second intervals. In a separate medium bowl, whisk together the eggs, vanilla extract, and sugar until well combined. Add in the melted chocolate mixture and whisk until combined. Then, add in the cocoa powder and flour, and use a wooden spoon to mix until smooth.
Fold in the chocolate chips. Bake at 350F for 18-22 minutes. Once done, remove from the oven and let cool in the pan for 15 minutes. Once the pan is slightly cooled off, move the pan to the freezer, and allow to sit for 15-20 minutes to set, until the brownies are able to be cut without being too gooey. In a medium microwave-safe bowl, melt the chocolate and coconut oil together for the chocolate coating at 30-second intervals, stirring in between each. Once the brownie is set, cut into 20-25 bite-sized brownie bites. Line a large baking sheet with parchment paper. Dip each brownie bite in the chocolate to completely cover all sides, and place on the prepared baking sheet with parchment paper. Sprinkle the tops with rainbow sprinkles if desired. Place back into the freezer for at least 15 minutes to allow the chocolate to harden. Store in an airtight container in the fridge. Enjoy!
