Essentially apple pie in sourdough biscuit form, made cozy with avocado oil shortening. Perfect for holiday baking.

Preheat the oven to 425F. Lightly grease a 10” round baking pan with avocado oil; set aside. Prepare filling & topping. In a medium saucepan over medium heat, melt the butter. Add the chopped apples, and the rest of the ingredients (brown sugar, water, all-purpose flour, cinnamon, apple pie spice, cornstarch). Stir well. Cover and cook until apples are soft. Remove from the heat; set aside. In a large bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, sugar, and salt. Add in the avocado oil shortening, and use a pastry cutter to cut the shortening into the flour mixture, until crumbly and resembles pea-sized chunks. Add the buttermilk, sourdough discard, and 1/2 cup apple pie filling (reserve rest for topping). Mix, then use your hands to knead and fold until combined (it will be sticky). Use a 1/2 cup to scoop the dough & place into the prepared pan. Brush biscuits with melted butter, then spread the rest of the apple pie filling on top. Bake at 425F for 20-25 mins, until golden brown. Remove from the oven. Make the maple vanilla bean glaze by whisking together the ingredients in a medium bowl (note: glaze recipe is on the website). Pour the glaze all over the warm biscuits. Serve warm and enjoy!
