These Cherry Pie Crumble Bars use minimal and wholesome ingredients, melting in your mouth with tart, sweet, and crumbly goodness. They are gluten-free and vegan, making it hard to wait for them to cool before slicing!

Preheat oven to 350F. Line an 8x8” pan with parchment paper and spray with cooking spray. Set aside. To make the base and topping, use a fork to mix together the oat flour, oats, brown sugar, coconut sugar, baking soda, and salt together in a large bowl. Add the melted coconut oil or melted butter and the extracts, and mix until crumbles are formed. Place 1 3/4 cups of the mixture into the prepared pan and use your hands to press the dough into the bottom of the pan. Place the remaining mixture into the fridge (it will be used for the topping). To make the cherry pie filling, place a pot over medium heat. Add the cherries, maple syrup, almond extract, cornstarch or arrowroot, and salt. Once the cherries get soft, use a wooden spoon to break the cherries up a little. Bring to a boil, then reduce the heat and cook for about 5 more minutes until the mixture is thickened. Pour the mixture over the crust and spread evenly with a spoon. Take the remaining topping out of the fridge, and sprinkle over the cherry filling. Bake for 30 minutes or until the top is golden brown. Allow the bars to cool completely on a cooling rack before transferring to the fridge to chill. Cut into 16 bars. Enjoy!
