Prepare the sourdough tortilla dough. In a large bowl, mix together the sourdough discard, olive oil, and water. Add in the flour and salt, and mix until a dough forms. Knead for 1-2 minutes, until there are no dry spots and the dough is smooth. Cover with a damp paper towel, and rest at room temp for 30 mins. Make the burger sauce by combining all of the ingredients in a small bowl, and mixing until well combined. Place into the fridge until ready to use. Cook the tortillas. Preheat a large skillet to medium-high heat. Lightly flour a surface and turn the dough over. Divide into 10 pieces. Roll each piece of the dough out into a thin circle (~1/8ā thick). Dry cook individually for ~1 minute on each side. Flip when the bubbles appear and the edges are firm. Remove from the pan and place onto a plate or wrap in foil until ready to use. Make the smash burger tacos. Portion the meat into 4, 3.5oz balls. Season with salt and pepper to taste. Heat a pan over high heat. Once hot, place a ball of beef onto the pan. Quickly place a sourdough tortilla on top of the beef, and smash it down until very thin, using a large bowl, spatula, or burger press. Cook for ~3 mins, or until the beef is darkened and crisp. Use a spatula to flip, reduce the heat to medium, and add cheese on top of the beef. Cover and allow the cheese to melt, for ~1-2 more minutes. Remove from the pan and top with lettuce, pickles, and the homemade burger sauce. Enjoy!
