Preheat oven to 350F. Line a muffin pan with paper liners; set aside. Start by making the cinnamon swirl mixture. Combine the ingredients in a small bowl, and mix. Set aside. Then, make the streusel. In a medium bowl, combine all ingredients for the streusel and mix with a spoon until well combined. Set aside. Make the muffin batter. In a large mixing bowl, add the melted butter, both sugars, yogurt, milk, cinnamon, eggs, vanilla, and salt. Whisk until well combined. Then add in the flour, baking soda, and baking powder, and mix until just combined. Add the chunks of apples, and fold until the apples are evenly incorporated. Scoop the batter into the prepared muffin wells, filling each halfway. Sprinkle the batter with cinnamon swirl mixture (~1 tsp), and then scoop the second half of batter on top of the cinnamon swirl. Sprinkle ~1 tbsp of the streusel on top of the muffins, slightly pressing the streusel into the muffin batter. Bake at 350F for 18-20 minutes, or until a toothpick inserted into the middle comes out clean. Let cool for 15 minutes in the pan, and then transfer to a wire cooling rack. Serve warm. Enjoy!
