Preheat the oven to 375F. Line a baking sheet with parchment paper; set aside. Prepare the cookie dough. In a small bowl, whisk together the flour, cornstarch, baking soda, and salt. Set aside. In a separate medium bowl, cream together the butter and both sugars for about 2 minutes, until light and fluffy. Add in the egg yolk, heavy cream, and vanilla, and beat until combined. Add the dry ingredients to the wet, and fold until just incorporated. Be careful not to over-mix! Fold in the chocolate chips and chopped walnuts until they are evenly dispersed throughout the dough. Divide the dough into 2 large dough balls and shape into a loose ball. Place the dough balls onto the prepared baking sheet. Bake at 375F for 14-18 minutes, until golden and crispy on the edges yet still slightly soft and gooey in the middle. Remove and if desired, use a large cup or bowl to swirl around the cookies to make them into a perfect circle. Let cool on the baking sheet for 5 minutes before serving. Serve warm with a sprinkle of flaky sea salt and a glass of milk, if desired. Enjoy!
