In a large bowl, add the eggs, sugar, vanilla extract, and milk. Whisk until smooth. Then, add in the flour, baking powder, and cinnamon, and mix until just combined. Set aside. In a separate medium bowl, mix together the diced @crunchpak sweet apple slices and lemon juice. Add the apple into the batter mixture, and use a wooden spoon or spatula to mix everything together. Then, gently fold in the rainbow sprinkles. Heat oil in a pan or pot to 375F. Scoop out large spoonfuls of the batter and gently slide them into the hot oil. Cook until the first side is golden brown (about 1-2 minutes). Then flip it over, and cook until the other side is also golden brown (about another 1-2 minutes). Repeat with the remaining batter. Remove the apple fritters from the oil with a slotted spoon, and place them on a baking sheet lined with paper towels to absorb the excess oil. Allow to cool. While the excess oil is being absorbed, make the glaze. Mix all of the ingredients for the glaze together in a medium bowl. Once the fritters are slightly cooled, dunk each in the glaze to coat it. Place the fritters on a wire cooling rack and immediately sprinkle with rainbow sprinkles. Allow to air dry and set. Enjoy!
