HONEY COCONUT PROTEIN CREPES W/ CARAMELIZED BANANAS

Instructions: Combine the coconut milk, oats, protein powder, eggs, honey, and vanilla extract in a blender (I used my @nutribullet Pro 900), and blend until smooth; about 20 seconds. Heat a small nonstick pan on medium-low heat, and add a small amount of butter or coconut oil to the pan. Swirl to coat. Scoop about ¼ cup of the crepe mixture onto the pan, and swirl to spread to form a larger circle. Cook for about 1-2 minutes until the surface is somewhat dry and is only a little wet in the center. Use a spatula to carefully flip. Cook the other side for about another minute. Remove from the pan, and repeat with the remaining batter. To make the caramelized banana, melt the coconut oil or butter in a small skillet over medium heat. Once hot, add in the banana slices. Pour the maple syrup over the banana slices and then sprinkle with cinnamon. Cook the bananas for about 2-3 minutes, flip, and cook for an additional 2-3 minutes, or until they’re caramelized on both sides. Remove from heat, and mix in the vanilla extract. Plate the crepes and top with caramelized bananas, coconut whipped cream, powdered sugar, and maple syrup if desired. Enjoy!
