Preheat the oven to 425F. Lightly grease a 10” cast iron skillet or smaller baking pan (depending on the size of your brie wheel); set aside. Start by prepping your biscuits. In a large bowl, whisk together the flour, cake flour, baking powder, baking soda, sugar, and salt. Add in the cubed butter, and use a hand mixer to mix until the mixture is crumbly with pea-size chunks (you can alternatively cut the butter into the flour with a pastry cutter or two knives). Pour in the buttermilk, and mix until combined. The dough should be soft enough to scoop. Remove the top rind from the brie (using a serrated knife makes it easy). Place brie in the center of the prepared baking skillet or pan. Then, use a 1/3 measuring cup sprayed with nonstick cookie spray to scoop the biscuit dough and place around the brie in the prepared skillet or pan. Add the fig jam and chopped walnuts on top, in the middle of the brie wheel. Bake at 425F for 18-20 minutes, or until the biscuits are light golden and the brie is melty. Remove and serve warm with a sprinkle of fresh thyme if desired. Enjoy!
