Preheat air fryer to 350F. To make the apple pie filling, add the diced apples and water to a large pan over medium heat. Cover and let cook until the apples are soft and tender (3-5 minutes). Add in maple syrup, cinnamon, and vanilla. Mix and allow to simmer over medium heat until liquids are slightly thickened. Mix in the granola butter and remove from heat. Allow to cool. To make the dumpling wrapper dough, slowly add the boiling water to the flour. Mix together until a shaggy dough forms (if it’s a little to dry, add in more water by ½ tbsp at a time). Knead on a lightly floured surface until the dough is smooth. Lightly oil a bowl, place the dough inside, cover and let rest for 30min - 1 hour. Roll out the dough into a log, and cut into small pieces (you should get around 10), and roll each piece into a ball. Roll each ball of dough out into a thin circle. Lightly brush the edges of the circles with egg wash, fill with a small amount of the apple pie filling, fold in half, and then pinch together on each side to create a dumpling shape (you can do a more simple fold, just however you’d like). Place a piece of parchment paper in the basket of the air fryer, and then place the dumplings inside (3-4 at a time). Lightly brush the tops with egg wash, and air fryer at 350F for 9-11 minutes, or until golden brown. Remove, lightly brush with melted butter, then roll in the cinnamon sugar mixture to completely coat. Top with a drizzle of caramel or syrup and a dust of powdered sugar if desired. Enjoy!
