Line a baking sheet with parchment paper; set aside. In a large bowl, mix together all of the ingredients for the peanut butter filling. Scoop ~1/4 cup of the peanut butter filling for each cluster onto the prepared baking sheet. Use the back of a spoon to smooth out the tops of each and slightly flatten. Sprinkle the tops with chopped peanuts, if using. Then, freeze for 1-2 hours. Once the clusters have hardened in the freezer, make the chocolate coating. In a medium microwave-safe bowl, melt the chocolate and coconut oil together at 30-second intervals, stirring in between each. Dip each frozen cluster in the chocolate to completely cover both sides, and place back on the baking sheet lined with parchment paper. Sprinkle with sea salt if desired. Place back into the freezer for at least 15 minutes to allow the chocolate to harden. Serve immediately. If not eating right away, store the clusters in an airtight container in the freezer. Once ready to have, remove from the freezer, and let sit for 2-3 minutes to allow the middle to slightly soften. Enjoy!
