To make the crumb topping, combine the flour, sugar, cinnamon, and salt in a medium bowl. Stir in the melted butter until combined. Place in the fridge while you prepare the muffins. Preheat the oven to 400F. Line a 12-cup muffin tin with paper liners (I used @ninjakitchen 12 cup muffin pan); set aside. In a large mixing bowl, whisk together the flour, baking powder, apple pie spice, and salt; set aside. In a large bowl, beat together the butter and sugars until light and fluffy. Add in the eggs and yolk, one at a time, beating after each addition. Then, slowly beat in the vanilla, buttermilk, and greek yogurt until combined. Gradually add in the dry ingredients, and mix until just combined. Fold in the apples with a spatula or wooden spoon. Divide the muffin batter evenly among the muffin wells. Then, crumble the topping up and evenly distribute it on top of the muffins. Bake for 22-24 minutes, or until golden brown and a toothpick inserted in the middle comes out clean. Allow the muffins to cool in the pan for 15 minutes, then transfer to a cooling rack. Drizzle honey on top of each muffin if desired. Serve warm.
