In a large bowl, mix together the greek yogurt, vanilla extract, and sugar. Add in the flour, baking powder, and salt. Stir together with a wooden spoon until a dough forms. Lay the dough out on a floured surface and use your hands to flatten the dough. Fold the dough over itself. Then, flatten and fold again. Repeat 3-4 times. Flatten again, and shape the dough into a rectangle about 1 inch thick. Cut the rectangle into 9 pieces, dust lightly with flour, and allow to sit for 10 minutes. While they are sitting, preheat the air fryer to 375F. Place a piece of parchment paper in the basket of the air fryer. Brush the tops of the dough with melted butter, then place the beignets buttered side down in the basket of the air fryer. Brush the tops of the beignets as well. Air fry for 6-7 minutes or until golden brown on top. Then, turn the beignets over and cook for another 5-6 minutes. Remove from the basket and repeat if you need to make multiple batches. While cooking, heat the hazelnut cocoa spread and milk in the microwave for 30 seconds, and mix to combine. When the beignets are finished, dust the tops with powdered sugar and dip in the hazelnut cocoa dip if desired.View original recipe
