Preheat the air fryer to 360F. In a small bowl, mix together the cinnamon and sugar, and set aside. In a larger bowl, combine the eggs, milk, and vanilla, and whisk until smooth. Roll each slice of bread flat with a drinking glass or rolling pin. Spread a spoonful of the blueberry brunch cashew butter in the center of each slice and roll up. Dip each roll-up into the egg mixture, making sure all sides are coated. Then, roll each in the cinnamon sugar mixture, making sure to completely coat. Spray the basket of the air fryer with cooking spray of choice, and place the roll-ups in a single layer in the basket of the air fryer. Air fry at 360F for 8-10 minutes or until golden brown. Remove and plate. Lightly dust with powdered sugar and serve with maple syrup, if desired.
