AIR FRYER CHEESY POTATO CROQUETTES

Basically like an adult tater tot, only better! They’re crispy, cheesy, bursting with flavor, and are also a great way to use leftovers 😌 the perfect comfort food and may be one of my all-time favorites

What you need

cup all purpose flour

russet potato

tsp garlic powder
tbsp salt

mozzarella cheese

cup bread crumbs

tsp black peppercorn
brown egg
tsp parsley flakes

olive oil cooking spray
Instructions
Preheat air fryer to 400F. In a pot, add your potatoes + 1 tsp salt, and enough water to cover the potatoes. Bring to a boil over high heat, then reduce to medium heat and cook until the potatoes are fork tender, about 15 minutes. Drain the potatoes and add them to a large bowl. Then, add in the dried parsley, garlic powder, onion powder, dash of salt + pepper, and mash using a potato masher. Prepare 3 shallow plates/bowls, one with the flour seasoned with salt/pepper, one with the beaten egg, and one with the panko breadcrumbs seasoned with salt/pepper. Using a small ice cream scoop, scoop out enough mashed potatoes to roll into a golf ball size portion. Place a cheese cube in the center, and use your hands to shape the mashed potato around the cheese (you can form it into a ball or cylinder shape). Place on a plate and repeat with the remaining potatoes and cheese. Roll the croquettes first into the flour, then dip in the beaten egg for an even layer, and finally roll them in the panko breadcrumbs, making sure they are completely coated. Spray the basket of the air fryer with olive oil spray. Working in batches, place the croquettes in the air fryer, making sure they are evenly spaced out. Lightly spray the tops and air fry for 7-10 minutes or until crispy and golden brown (you can gently toss halfway through). Serve with ketchup or dipping sauce of choice. Enjoy!View original recipe
