What you need

Instructions
Start by boiling the lasagna noddles according to the package instructions. Once cooked, rinse in a colander with cold water. Set aside. In a medium bowl, mix together the eggs, all of the cheeses, and Italian seasoning until fully combined. Lay the lasagna noodles flat, and spread about 3-4 tbsp of the cheese mixture on top of the noodles (should cover the entire surface lengthwise). Roll the noodles into about a 2-3” length. Place the filled and rolled lasagna noodles on a baking sheet lined with parchment paper, and place in the freezer while preparing the coating ingredients and preheating the air fryer. Preheat the air fryer to 400F. In a small bowl, whisk together the eggs and water. In another separate bowl, combine the Italian and panko breadcrumbs with the grated parmesan cheese. One by one, dip each rolled lasagna in the egg mixture, followed by the breadcrumb mixture to completely coat. Spray the basket of the air fryer with olive oil spray, and place the lasagna frittas in the basket (you may need to work in batches). Lightly spray the tops of the lasagna frittas with olive oil spray. Cook for 14-16 minutes, flipping halfway through, until golden brown and crispy.
