Air Fryer Lemon Blueberry Fritters

What you need

cup powdered sugar

cup granola

cup sugar
cup blueberry
lemon

tsp vanilla extract

tsp baking soda

cup nonfat greek yogurt

cup all purpose flour
Instructions
Preheat air fryer to 375F. In a medium bowl, combine the flour, greek yogurt, baking soda, vanilla extract, and lemon juice. Mix until a sticky dough forms (if the dough is too wet to handle, add 2-3 tbsp more flour). Then, add in the blueberries and lemon zest, and mix until evenly distributed throughout the dough. Put the granulated sugar into a small bowl. Line the basket of the air fryer with a piece of parchment paper. Using a large spoon, scoop the dough out (about 2 tbsp per ball), and place the ball of dough directly into the granulated sugar. Roll the ball around in the granulated sugar, making sure to completely cover the surface (the dough might be a little sticky, but that’s okay - you can use a spoon to help roll it around if it is sticking to your hands too much). Once coated, place directly into the air fryer basket. Repeat until the dough is gone. Air fry for 7-9 minutes or until golden brown. While they are in the air fryer, mix together the ingredients for the granola butter glaze in a medium bowl. Once done, remove from the air fryer and drizzle the glaze on top.
