Instructions
Preheat air fryer to 350F. In a large bowl, combine the flour, baking powder, baking soda, and salt and whisk well. Add in the greek yogurt and mix with a spoon until well combined and a dough forms. Knead the dough with your hands on a lightly floured surface until smooth (if the dough seems too sticky, add 1 tbsp more flour at a time). Divide the dough into 8 equal-sized pieces and flatten each piece into a long oval shape. Sprinkle ~1-2 tbsp of mozzarella cheese down the middle of each oval. Then, fold the sides over and pinch to completely seal the mozzarella in. Roll each pieces into worm like strips (~9” long). Tie each strip into a knot-like ball and place onto a piece of parchment paper. Then, make the garlic butter. In a small bowl, combine the melted butter, garlic, salt, and parsley, and mix to combine. Spray the basket of the air fryer with olive oil spray. Working in batches, place the knots into the basket of the air fryer, then brush the tops with the garlic butter. Air fry at 350F for 10-12 minutes, or until golden brown. Repeat with the remaining knots. Remove from the air fryer and brush with the remaining garlic butter. Sprinkle the tops with grated parmesan cheese if desired. Serve with marinara or pizza sauce.
