What you need

tbsp baking powder

tsp baking soda

cup natural sugar

oz salted butter

cup nonfat greek yogurt

tsp vanilla extract

cup apple

tbsp light-brown sugar

tbsp maple syrup

tsp ground cinnamon
lemon
tsp cornstarch

brown egg

tbsp non-dairy milk
Instructions
Preheat oven to 400F. Line a baking sheet with parchment paper; set aside. For the filling, add all ingredients, except the cornstarch, into a saucepan over medium heat. Cook for 10 minutes until the apples are tender. Pour the cornstarch mixture into the apples. Cook until the filling begins to thicken. Remove from heat & allow to cool while making the dough. For the dough, whisk together the flour, baking powder, baking soda, and sugar. Add in the cold butter and mix to coat. Then, add in the greek yogurt and vanilla; mix well. Add 1 tbsp of water at a time and mix, until the dough sticks together. Knead a couple of times on a floured surface. Roll the dough out, fold, then roll out again. Repeat 3 times. Roll dough out to 1” thick. Use a cookie cutter to cut out ~10 circles. Fill the center of 5 circles with 1 tbsp of filling. Brush the border of each filled circle with the egg wash. To the other half of the circles cut 4 slits in the center. Place the vented circles on top of the filled circles. Press down on the edges to seal. Use a fork to crimp the edges. Brush the tops with the egg wash. Then, sprinkle the cinnamon sugar on top of each. Bake for 13-15 minutes. Enjoy!View original recipe
