Instructions
Line 3 baking sheets with parchment paper; set aside. In a large bowl, combine the warm water, sugar, and yeast and stir to combine. Let sit for 5 minutes. Add in the egg, buttermilk, melted butter, salt, and vanilla, and whisk. Add in the all-purpose flour, and use a wooden spoon to mix until the dough comes together. Remove from the bowl and knead the dough a couple of times on a lightly floured surface until smooth. Transfer the dough to a lightly greased bowl and cover. Let the dough rise in a warm environment for 15 minutes. Make the apple pie filling. Add the apples and water to a large pan over medium heat. Cover and let cook until the apples are soft (~5 min). Add in maple syrup and cinnamon. Simmer over medium heat until the liquids are thickened. Remove from heat and mix in the vanilla. Set aside. On a lightly flour surface roll the dough out to a 1/4” thick rectangle. Cut out 3” squares and place on the prepared baking sheets. Add ~1-2 tsp of the apple pie filling to the middle of each. Then, fold the sides over and pinch to seal. Let the beignets proof in a warm environment for about 30 minutes. Preheat the oven to 375F. Brush the tops with milk. Bake at 375F for 10-12 minutes, or until lightly golden. Let cool and then dust with a generous amount of powdered sugar. Enjoy!View original recipe
