What you need

bacon bits

egg

shredded cheddar

skim milk greek yogurt

milk

garlic powder

black peppercorn

salt

unsalted butter

gluten free all purpose flour

elbow pasta
Instructions
First make the mac and cheese if using homemade. In a medium saucepan over medium heat, melt the butter. Then add in the flour, salt, pepper, and garlic powder, and whisk to combine. Cook for 1 minutes until the mixture is slightly brown. Add the milk and whisk until smooth. Then, add in the greek yogurt or sour cream, and whisk until smooth. Cook on medium-high heat until the mixture has thickened, but donβt let it boil! Once thickened, reduce the heat to low and add the cheese. Whisk until the cheese is melted and smooth. Then add the cooked pasta and stir until well combined. Let cool for about 5 minutes, then start to make the waffles. Preheat the waffle iron. Combine the mac and cheese and flour. Then, add the eggs and stir until well combined. Fold in the cheese and bacon crumbles. Spray the waffle iron with cooking spray of choice, and place a small amount of the batter in each well if using a mini waffle iron. If using a large waffle iron, you can put ~1/2 cup of the batter into each section. Cook for 5-6 minutes, until golden. Serve warm with sauce of choice. Enjoy!View original recipe
