What you need

cup buttermilk

cup coconut oil

cup cane sugar
tsp vanilla extract

cup all purpose flour

tsp baking powder

tsp baking soda
tsp salt
cup sweet butter
cup walnut pieces

cup light-brown sugar
tbsp maple syrup
tsp ground cinnamon

cup honey

cup powdered sugar

tsp lemon
Instructions
Preheat the oven to 350F and generously grease a bundt pan with baking spray, and then lightly dust with flour. Prepare the baklava topping first. Combine the melted butter, nuts, brown sugar, maple syrup, and cinnamon in a small bowl. Pour into the bottom of the prepared bundt pan and set aside. In a large bowl, whisk together the mashed bananas, eggs, buttermilk, melted coconut oil, and vanilla extract, and stir to combine. Then, add in the granulated sugar and stir to combine. In another large bowl, combine the flour, baking powder, baking soda, and salt. Then, add the dry ingredients to the wet. Pour and spread half of the batter into the prepared bundt pan. Then, dollop the banana bread granola butter on top and spread. Pour the rest of the batter on top, and spread to cover the granola butter. Bake for 45-50 minutes, or until golden brown and the sides start to pull away. While the cake is baking, whisk together the ingredients for the honey glaze in a medium bowl. Allow the cake to cool for at least 10 minutes, then invert onto a wire cooling rack to cool completely. Once cooled, drizzle the honey glaze on top. Enjoy!View original recipe
