BANANA SOURDOUGH WAFFLE BITES

These little bites are fluffy, soft, crisp, filled with perfectly warm and sweet banana, and of course paired with a side of maple syrup 😌 Best enjoyed with a cup of coffee in the morning — brb, making myself a batch of these every week 🤎

What you need

tsp vanilla extract

brown egg

tbsp unsalted butter

cup milk

cup plain greek yogurt

tbsp granulated sugar

tsp kosher salt

tsp baking soda

cup all purpose flour
Instructions
Preheat waffle iron. In a medium bowl, whisk together the flour, baking soda, salt, and sugar. Set aside. In a separate medium bowl, whisk together the sourdough discard, milk, melted butter, egg, and vanilla extract, until smooth. Add the wet ingredient mixture into the dry ingredient mixture, and mix until just combined. Spray the waffle iron. Add enough batter to slightly cover the bottom of each waffle section, top with a slice of banana, and then pour more batter on top to cover the banana and fill the waffle section. Cook the waffles until golden brown. Repeat with the remaining batter until he banana coins are gone. Plate and serve warm with maple syrup and a dusting of powdered sugar, if desired.
