BROWN BUTTER CARAMELIZED BANANA BREAD OATMEAL COOKIE SKILLET

This skillet cookie combines the flavors of banana bread and oatmeal cookies with brown butter and caramelized bananas, served warm with vanilla ice cream and flaky sea salt.

What you need

tsp cinnamon

tsp baking soda

cup granulated sugar

tbsp salted butter

tbsp brown sugar

tsp fine sea salt

cup rolled oats
tsp baking powder

tsp vanilla extract

cup semisweet chocolate chips

cup ripe banana
egg
cup ap flour

Instructions
Preheat oven to 350F. Grease a 10” cast iron skillet with butter; set aside. Brown Butter: Add the butter to a saucepan over medium-high heat. Melt & slightly brown (~5-8 mins). Once golden, add the mashed bananas & sprinkle ~1-2 tbsp of the brown sugar on top. Mix & simmer for 2-3 mins, until bananas are slightly caramelized. Remove & pour into a large bowl. Cool slightly. Caramelized Banana Slices (if using as mix-in): Melt the butter in a skillet over medium heat. Add the banana slices & sprinkle the brown sugar & cinnamon on top; toss to coat. Cook for ~4 mins, flip & cook the other side for another 3 mins, until caramelized on both sides. Set aside. Continue Dough: In a bowl, whisk together the flour, oats, cinnamon, baking soda, baking powder & salt. Set aside. Once brown butter/caramelized banana mixture is cooled, add both sugars; whisk well to combine (mixture should start to turn smooth & gooey). Whisk in egg & vanilla until combined. Add dry ingredients to the wet; mix until just combined. Then, fold in the chocolate chips/chunks & the caramelized banana slices (if using). Transfer & evenly press the batter into prepared skillet. Bake at 350F for 28-32 mins, or until golden & the middle is still slightly gooey. Cool for 10 mins before serving. Serve warm with vanilla ice cream, flaky sea salt & salted caramel.
