What you need

brown egg

tsp vanilla extract

cup gluten free all purpose flour
tsp baking powder

tsp salt
cup buttermilk
cup dark chocolate chips

Instructions
Preheat oven to 400F. Line two muffin trays with liners; set aside. In a large bowl, cream together the butter and 1 cup of granulated sugar until light and fluffy. Add in the eggs and vanilla, and continue to beat until combined. In a separate large bowl, whisk together the flour, baking powder, and salt. Add 1/3 of the flour mixture and mix until combined. Then, add 1/3 cup of the buttermilk and mix to combine. Alternate between mixing in the flour mixture and buttermilk, until both are fully incorporated into the batter. Fold in the chocolate chips. Scoop the batter into the prepared muffin tins. Sprinkle the top of the muffins with the remaining 2 tbsp of granulated sugar. Bake at 400F for 20-22 minutes, or until light golden brown on top. Remove from the oven and allow the muffins to cool in the pan for 5-10 minutes, then transfer them to a wire cooling rack to cool completely. Enjoy!View original recipe
