What you need

honey

powdered sugar
salted butter

fine sea salt

baking powder

baking soda

all purpose flour

granulated cane sugar

vanilla extract

plain greek yogurt
extra-virgin olive oil

Instructions
Preheat the waffle iron. In a small bowl, combine your milk and vinegar. Whisk to combine, and let sit for at 5 minutes. This will act as homemade buttermilk! In a medium bowl, combine the flour, baking powder, baking soda, and salt. Whisk until well combined, set aside. In a separate large bowl, whisk together the bashed bananas, egg, milk/vinegar mixture, olive oil, greek yogurt, vanilla extract, and granulated sugar, until well combined. Add the dry ingredients to the wet, and use a wooden spoon or spatula to mix until just combined. Spray the waffle iron with nonstick cooking spray. Add enough batter to fill each waffle section. Cook the waffles until golden brown, about 4-5 minutes. Keep the waffles warm in the oven or covered with foil on a plate while you cook the rest. While the waffles are cooking, make the whipped honey cinnamon butter by mixing all of the ingredients together in a bowl with a hand-held mixer or whisk, until light and creamy.
