What you need

ground black pepper

salt

garlic
extra-virgin olive oil

cherry tomato

mayonnaise

honey

baby arugula

mozzarella cheese

pesto sauce

multi-grain bread
Instructions
Start by making the burst cherry tomatoes. In a medium skillet, add the olive oil. Once heated, add the tomatoes, garlic, salt, pepper, and dried basil. Cook, stirring to coat until tomatoes begin to burst (~4-5 minutes). Smash some but not all of the tomatoes with the back of a wooden spoon, continue to cook, and then remove from heat. Then, make the grilled cheese. Preheat a skillet or grill pan over medium heat. Brush the outside of each bread slice with mayo to lightly coat the bread. Spread the basil pesto on the other side of each slice of bread. Place the fresh mozzarella slices on top of the pesto on one slice of bread. Then, add the burst cherry tomatoes on top, drizzle with hot honey, if using, and then top with a handful of fresh arugula. Place the other slice of bread on top with the pesto side facing down. Place the sandwich in the pan and cook over medium heat until golden brown and the cheese has melted, about 2-4 minutes per side. Slice in half and serve warm.View original recipe
