What you need

maple syrup

1 fl oz maple syrup

creamy peanut butter

1 oz creamy peanut butter

greek yogurt

1 cup greek yogurt

pancake mix

½ cup pancake mix

banana

coconut oil

1 fl oz coconut oil

almond extract

½ tsp almond extract

buckwheat flour

1 buckwheat flour

ground cinnamon

1 pinch ground cinnamon

almond milk

1 cup almond milk

Instructions

Slice banana into wide coins. Whisk pancake mix and water or almond milk according to instructions. Whisk in almond extract and cinnamon. Coat the banana slices in the pancake mix. Heat coconut oil or butter in a large skillet over medium heat. Cook the coated banana slices for 2-3 minutes on each side or until golden. Garnish with maple syrup, Greek yogurt, pb, or your topping of choice. Enjoy!
